Peanut oil varies greatly in quality. When it has not been cold pressed (and most domestic peanut oil has not been), there is little or no peanut flavor. At Asian markets, you can find cold-pressed oils with a true peanut taste. Oils extracted from roasted almonds, walnuts, hazelnuts, macadamia nuts, and pistachios are elegant and pure tasting but expensive and fragile: they go rancid quickly and must be refrigerated. They also have low smoke points and do not stand up well to excessive heat. Use nut oils as flavorings when you would use that nut itself.
